The Heart of POPS: A Family's Dream in Downtown Canton

There's something special about walking into POPS on a Canton afternoon. The smooth jazz floats through the air, the aroma of house-made pasta and simmering sauce greets you at the door, and within moments, you're welcomed like an old friend. This is Palermo's Original Pasta & Sandwiches—known simply as POPS to locals—and it's the kind of neighborhood gem that makes living in downtown Canton feel just right.

Owner Andy Palermo opened POPS with his wife Amber and their two kids, Agnes and Augustine, bringing decades of restaurant experience from Atlanta, Miami, Phoenix, and Tucson to Cherokee County. But this isn't about flashy concepts or corporate polish. It's about fulfilling a dream Andy's carried since his first job bussing tables at an Italian restaurant back in Connecticut: a family-run operation rooted in community, serving simple, fresh, delicious food.

What Makes POPS Different

The magic at POPS starts early each morning when the team begins making fresh pasta by hand. Bucatini, spaghetti, trenne, mafalde—the shapes change with the seasons and the menu, but the commitment to quality stays constant. The house-made sauces, meatballs, and sausage follow the same philosophy: authentic imported Italian ingredients prepared with care, inspired by the Italian-American tradition that turned Old World recipes into comforting classics we all crave.

Located inside the historic Jones Building at 130 E. Main Street, POPS feels both cozy and energetic. Large windows let natural light spill into the dining room, and the counter-service setup keeps things casual and accessible—perfect whether you're grabbing lunch between meetings, bringing the family after a ballgame, or picking up fresh pasta and sauce to cook at home.

A Peek Inside the Menu

In the video, you'll get a look inside the kitchen where the daily pasta-making happens, and you'll see why reviewers consistently rave about the food here. The menu celebrates three pillars: fresh house-made pastas, artisan sandwiches, and vibrant salads.

The pasta dishes run the gamut from traditional spaghetti and meatballs to inventive creations like spicy shrimp alla vodka and seafood scampi tossed with ribboned mafalde. The chicken riggies and eggplant parm pasta are customer favorites, and there's even a gluten-free option for those who need it. Vegetarians will love the eggplant meatballs served with Palermo's slow-simmered red sauce—proof that the kitchen puts as much heart into contemporary alternatives as it does the classics.

The sandwiches deserve their own spotlight. Inspired by the beloved R&M Hoagie Shop that closed before the Palermos moved to Canton, Andy and Amber set out to create "really great sandwiches" built on things they love. The chicken parm vodka sandwich, the Hey Frankie sub, and the meatball sandwich all get enthusiastic mentions in reviews. Don't overlook the pasta chips, either—a creative starter that's become a local talking point.

And if you're stopping by on a Sunday, ask about Nonna's chicken scarpariello: a juicy roasted chicken with mini Yukon potatoes, sausage, and roasted sweet peppers that feels like a family dinner you didn't have to cook.

Why Canton Loves POPS

The name POPS isn't just an acronym. It's also a tribute to Andy's father, whom he's always called "Pops." Even the logo—a caricature on the storefront—was inspired by his dad. That sense of family and warmth extends to every guest who walks through the door. Reviewers mention the friendly, attentive service and the way staff remember regulars. Andy himself is often on the floor, greeting diners and making sure everyone feels at home.

POPS quickly became a go-to lunch spot in Canton—the kind of place where you can grab a quick bite or settle in with friends. It's consistently ranked among the top restaurants in Cherokee County, and locals appreciate that it's not a chain. It's genuine, it's thoughtful, and it's ours.

If you want to understand what your home is worth in a community, look at the local businesses thriving here. POPS embodies the quality of life that draws people to downtown Canton: walkable streets, historic charm, independent restaurants where the owners know your name, and a real sense of neighborhood.

What to Try on Your First Visit

If it's your first time, the chicken parm sandwich and the chopped salad are beloved staples. Pasta lovers should go for the seafood scampi or the chicken riggies. And if you're a fan of bold flavors, try the eggplant meatballs—they're a vegetarian standby that even carnivores request. Pair your meal with a canned Italian soda from the colorful counter display, or ask about their Italian beer and wine selections.

POPS is open for lunch and dinner seven days a week, and the kitchen moves quickly even during the rush. You order at the counter, grab a seat in the big, comfortable dining room, and your food arrives fresh and fast. It's casual enough for a solo lunch and special enough for date night—the kind of flexibility that makes it a true neighborhood restaurant.
